200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Premix (yields 850ml, enough for 10)

For the Cordial: Combine all the components into a saucepan, bring to a gentle boil, stirring so the sugar melts. Next, remove from the heat allowing it to cool down entirely. Transfer to a sealable bottle, seal and store in the refrigerator, where it will keep for about one month.
Preparing the Cocktail Base: Combine all the liquid ingredients in a sizeable container, let it rest for 60 minutes, then filter it , ideally through cheesecloth, so it's fully clarified.
When ready to serve: Measure 85ml of the batch mix into your cocktail shaker containing ice, gently stirring lightly for a minute until cold. Filter into an chilled martini glass or equivalent, decorate with the cranberries adding the final touch using a brief mist with the mandarin essence over the top.
